Flourless PB Banana Bread Muffins

If you have a bunch of over ripe bananas, put them to good use and bake up a batch of this yumminess. Picky eater approved and loved by the whole household! Best of all, it is refined-sugar free and flourless. I added in some superfoods like chia seeds and ground flaxseed. On my next batch, I’m going to add some shredded carrots. I’m sneaky like that.

 

Flourless Peanut Butter Banana Bread Muffins

 

Prep Time: 5 Minutes

Cook Time: 20 Minutes

Yields: 9 mini muffins

 

Ingredients

1/4 cup 1-ingredient peanut butter (or any nut/seed butter)

2 ripe medium to large bananas

1 egg

2 tablespoon raw honey

1/2 cup rolled oats (sub gluten-free oats to make recipe gluten-free)

1/4 cup ground flaxseed

2 tablespoon chia seeds

1 teaspoon vanilla extract

1/2 teaspoon baking soda

 

Instructions

1. Preheat oven to 375 degrees F.

2. Add all ingredients to a blender and blend until the batter is smooth and creamy.

3. Pour batter into greased muffin pan or use cupcake liners. Fill each cup about 3/4 full.

4. Bake for 18-20 minutes, or until a toothpick inserted into the middle comes out clean.

Store in an air-tight container for up to a week or freeze.

 

*Reminder- babies under 1 year old should not consume honey due to risk of botulism.

      I made some berry muffins too :) The blieuerrbes I bought was a little sour, so I used them for baking. I like the idea of adding bananas to the recipe…this fruit has got this magical power of making bakes soft and fragrant!

    HHB,Yes, I always like bnanaa cake and muffins. Especially during baking. That sweet smell simply makes me feel like making myself a cup of tea and waiting to eat the cake…I will do the same when bought some small and sour blueberries. Otherwise would boil them with maple syrup to go with pancakes for breakfast.
