No Bake Energy Bites

This homemade treat is packed with super foods and totally guiltfree. Keep a batch around to satisfy your sweet cravings!

This recipe is incredibly versatile- add or subtract ingredients to your preference. Use agave in place of honey to make it vegan. Use sunbutter in place of peanut butter to make it school lunch friendly.

Cacao nibs bring a slight bitterness to balance out the sweet raw honey. I love using them to replace chocolate chips. You’ll get a dose of antioxidants and minerals, minus the sugar. Read about the full health benefits of cacao nibs here.

 

NO BAKE ENERGY BITES – Refined Sugar Free

1 cup       rolled oats

1/2 cup    1-Ingredient peanut butter

1/3 cup    raw honey

1/3 cup    cacao nibs – Organic Traditions Organic Nibs, Cacao, 16 Ounce

1/2 cup    ground flaxseed

2/3 cup    toasted shredded coconut

1 TBS      chia seeds

 

1. Combine all ingredients and mix well.

1. Refrigerate for 30 minutes (makes it easier to form).

3. Form into balls. I did two sizes; some for the big kids, some for the littles.

Keep in the fridge for up to 1 week. Put a couple in the kid’s lunch boxes for a sweet surprise.
